Classic Maligny. Mix of riper than expected fruit — pear and white
peach, and a sturdy, drum-like mineral beat. Even two days after
opening, the rock is still there, rhythmically pulsing away. Always one
of the better generic Chablis at the SAQ, and the 2014 is no exception. Residual sugar: 1.9g/L. Serve at 8-10C. Drink now. Food pairing idea: Apéritif, raw oysters, shrimp.Chablis Premier Cru 2014, Homme Mort, Château de Maligny, France white, $35, SAQ # 872986.
A bit closed, so at the start, it is all chalk and little fruit. Give
it some air and time, and notes of lemon and apricot begin to show,
alongside a salty chalk note on the finish. Every time I drink one, I
can’t help but think what a wonderful and unique wine is Chablis. Residual sugar: 1.5 g/L. Serve at 10-12C. Drink now-2018. Food pairing idea:
Apéritif, raw oysters, lobster.
